1. Prepare the vegetables

Winter is the best season to use fresh, nutrient-rich vegetables. Start by washing and chopping all the veggies — potatoes, carrots, capsicum, cauliflower, and peas.

2. Heat the oil

Heat oil in a pan. Once hot, add cumin seeds and let them splutter. Then add grated ginger and green chillies. Sauté for 1–2 minutes until fragrant.

3. Add tomatoes and spices

Add chopped tomatoes and cook until they soften.

Now add turmeric, red chilli powder, and coriander powder. Mix well and sauté for 2–3 minutes so the spices blend properly.

4. Add vegetables

Add all the chopped vegetables to the pan and mix well. Add salt and cover the pan. Let the vegetables cook on low flame for 10–15 minutes, stirring occasionally to prevent burning.

5. Add water and cook

If the mixture feels dry, add a little water. Cook until all vegetables become soft and well-cooked. Finally, add garam masala and mix everything together.

6. Garnish & serve

When the curry is ready, garnish with fresh coriander leaves. Serve hot with roti, paratha, or rice for a comforting winter meal.
