If you’re planning to make something special this Christmas, a homemade fruit cake is a perfect choice. Below is an easy step-by-step method to prepare a traditional Christmas fruit cake :-
200 g mixed dried fruits (raisins, figs, berries, etc.)
100 g candied ginger
100 g brown sugar
100 g butter
200 g all-purpose flour
½ tsp baking powder
½ tsp cinnamon powder
½ tsp ginger powder
¼ tsp nutmeg powder
3 eggs
100 g honey
50 g cashews and almonds (chopped)
50 g grated coconut
2 tsp lemon juice
¼ cup brandy or rum
First, wash the mixed dried fruits thoroughly and soak them in water for 4–5 hours. This helps soften the fruits and allows them to blend well into the cake.
In a bowl, sift together the flour, baking powder, cinnamon powder, ginger powder, and nutmeg powder. This ensures a light and fluffy texture.
In a large bowl, beat the butter and brown sugar together until light and creamy. Add the eggs one by one and mix well.
Now add honey and lemon juice, and mix again. Add chopped nuts, grated coconut, and the soaked mixed fruits.
Gradually fold the dry ingredient mixture into the wet ingredients. Mix gently to avoid lumps.
Add brandy or rum if desired to enhance the flavor and aroma of the cake.
Preheat the oven to 160°C (320°F). Pour the batter into a greased and lined baking tin. Bake for 45–50 minutes, or until a toothpick inserted comes out clean.
Once baked, remove the cake from the oven and allow it to cool completely before slicing and serving.
