Fresh spinach leaves – 2 cups
Onion – 1 (chopped)
Garlic cloves – 2–3 (chopped)
Ginger – 1 inch (chopped)
Capsicum – 1 (chopped)
Black pepper powder – ¼ teaspoon
Salt – as per taste
Water – 2 cups
Lemon juice – 1 teaspoon (optional)
Olive oil – 1 tablespoon
Wash the spinach leaves thoroughly and keep them aside.
Heat olive oil in a pan. Add chopped onion, garlic, and ginger. Sauté until they turn slightly golden.
Add chopped capsicum and spinach leaves. Cook for 2–3 minutes until the spinach wilts.
Pour in water and bring the mixture to a boil. Let it cook for 10–15 minutes so all the ingredients soften well.
Transfer the mixture to a blender and blend until smooth. Add more water if the soup feels too thick.
Pour the soup back into the pan. Add salt and black pepper powder. You may also add lemon juice for extra flavor.
